Every opening runs on a written programme.

We don't improvise an opening. We work it from a documented programme, run it on a system we built, and lead it as operators. Here's what that means in practice.

The programme covers the whole road to opening.

The work that decides whether a site opens properly happens long before the first customer. Our programme sets out each part of it, in order:

  1. Permits and licensing

What's needed, from whom, and in what sequence.

  2. Fit-out

The site built to the brand's standard and ready to trade.

  3. Grant and procurement compliance

Every purchase made the way the financing requires.

  4. Supplier sourcing

Who supplies what, to the brand's specification.

  5. Hiring

The team in place and trained before the doors open.

  6. Food-safety registration

Completed and in hand, not left to the last week.

Written once, used again.

A programme that lives in one person's head ends with that person. Ours is written down: each step has its place in the sequence and a check that it's done. Nothing depends on remembering what worked last time.

That's the substance behind the line on our home page. We build the system, not just the shop, so the next opening starts from the last one's record rather than from a blank page.

A system behind the counter, built by us.

Behind the counter, our first site will run on ShackOps, the back-office operating system we built ourselves, from day one.

We'd rather a standard live in a system than in anyone's memory. That's why we built our own instead of opening first and organising later.

Led by an operator, not a restaurateur.

Sam Felice is our founder and director. He's Maltese, and he came to this from commercial yachting operations: process, safety, logistics, and work that routinely crosses borders. In that world, a missed check or a late delivery isn't an inconvenience. It's the whole problem.

He runs TrueNorth Ventures as a holding company, not as a restaurateur. The programme and the system exist because that's how he works.

See where you fit.
